It’s egg season! After taking the winter off, my chickens are now working overtime on egg production. For us, this means egg dishes for almost every meal! While we do love the standard fried eggs for breakfast, creativity keeps eggs from becoming mundane.

One egg has only 75 calories but 7 grams of high-quality protein, 5 grams of fat, and 1.6 grams of saturated fat, along with iron, vitamins, minerals, and carotenoids. And even if you don’t have your own ready supply of eggs from backyard birds, they are still an economical source of protein. The average price for a dozen eggs in March of 2021 was $1.63—less than 15¢ an egg!
