Beginning last week (and continuing for the next couple of weeks) I’ve posted our menu plan after the fact. I wanted to share how even though I use a menu plan almost every week we do not necessarily stick to it 100%. Rather, my menu plan becomes more of a guideline. Things happen– I might forget to put the beans on to soak or forget to turn them on to cook (that happened two weeks ago). Or we might have an emergency come up where we need to change our dinner plans. I do believe that a menu plan is extremely beneficial from an budgetary and organizational stand point but things happen.
This week’s plan includes garbanzo beans (chick peas) as our Stretchy Bean. These are a very nice change of pace bean. They are quite different than most other beans in flavor and texture. I did decide to try a new recipe using garbanzos that was okay. It is probably one that I will try again and mess with a bit since Joe thought it was pretty good. I think he liked that it was a casserole instead of a saucy bean dish.
