I have a confession, I didn’t follow last week’s menu plan at all. Not that it was much of a plan to start! I never did put those new beans on to soak so we didn’t have any beans last week.
On Monday I did cook a crock pot dish but used a roast instead of stew meat. I cooked the (venison) roast in cumin and coconut milk. It turned out delicious.
Tuesday night the leftovers became a Skillet Dinner. The rest of the week we ate a lot of hamburger since we have quite a bit in the freezer.
One night I made Asian Infused Lettuce Wraps from Divine Dinner by Lydia Shatney (this eBook is part of the Natural Fertility Bundle available only through May 13, 2013). I’ve made this for lunch several times for the children but this was the first time I’d made it when Joe was home. He was absolutely smitten with it and said it was one of the best dinners I’d made in a long time. I think it is wonderful also but my favorite part about it is how quickly it goes together. I’m adding it to my Emergency Meal list. Quick tip for thawing hamburger– put it in water. It will thaw almost completely in about 20 minutes. For the wraps I put out a couple of toppings that each person could add as desired. Thick yogurt (to use as sour cream), sauerkraut, slivered almonds and coconut flakes. Delicious!
Another dish that was made on the fly, and also quite popular, was something like a Pasta Carbonara. I used this recipe as a guide but changed things slightly to accommodate what we had on hand (bacon, no wine, brown rice fettuccine).

This week I’m putting those new white beans back on the menu. We’ve never had this variety of white bean. My in-laws bought them up where they live (from a farm that grows many varieties of beans) and gave them to us. As a result we’re not sure of the flavor but are told they are used in Mexican food. I’m leaving the meals pretty loose as a result. On Saturday we are going up to my sister’s place for a graduation party for our children. We’ll stay up there Saturday night to go to my niece’s graduation on Sunday. On Monday is my little girl’s graduation.
Menu Plan
Sunday- Venison steaks, quinoa, creamed onions
Monday- Stretchy Beans Meal 1– probably simple beans and rice with greens.
Tuesday- Stretchy Beans Meal 2– possibly burritos
Wednesday- Stretchy Beans Meal 3– maybe Navajo tacos.
Thursday- Meatloaf, sides to be determined
Friday- Leftovers
Saturday- Graduation Party for my daughter and niece.
