Menu Plan Week of September 15

pintoplateThis week is going to be busy! I’ll tell you why this week is so busy later in this post– so keep reading. 🙂

I’m taking a few minutes right now to put together a simple menu plan since I function so much better with a plan in place. While this is a lot more casual than my usual plan it will provide enough simple structure to keep me together.

Tonight we’ll clean out the fridge. There are a few things left over from the cooking I did on Friday to prepare for the weekend. Joe and I, along with our little boy, were “gone hunting” over the weekend so I made a fair amount of food for that.

Tomorrow I’ll cook up a batch of pinto beans for the week. I’m not exactly sure what those beans will become but here is what we usually do with our Stretchy Pinto Beans.

I’ll also cook up a chicken (in the crock pot) on Wednesday which will make at least two meals.

For our vegetable I’ll  harvest from the garden (we have potatoes, turnips, beets, tomatoes, squash and greens ready to eat) should feed us well this week with very little effort.

Why will this week be so busy?

You may know that I do Virtual Assistant (VA) work. One of the fabulous people I work with is Wardee from GNOWFGLINS.

Wardee has been working on a wonderful project for the past several months. I’ve been helping her out here and there but now the project is LIVE and we are hopping.

You may know that preparedness and food storage is something that is very important to my family. We had an experience a few years ago that left us without electricity for several days. That was a huge eye opener and took us down a path of wanting to be ready if something similar happened in the future.
