This week I am not using my rotating 13 week menu plan. This was not an on purpose decision rather a lack of organization on my part. I forgot to put the beans on to soak on Sunday. We usually do Stretchy Beans on Monday, Tuesday and Wednesday so I need to have the beans soaking on Sunday. But to be honest, I’ve forgot to start them before. When that happens then we do Stretchy Beans on Tuesday, Wednesday and Thursday with me soaking the beans on Monday. But this week I forgot again. Can you believe that? So I decided just to bag the beans this week and go with other things.
I do have a few busy evenings this week. Tonight Kiki has a choir concert and Thursday I have a Weston A. Price Foundation meeting so I need to plan easy dinners for those nights. In fact, I pretty much need to have easy dinners each day since I’m pretty busy working my bookkeeping job (from home) and my home based business, taking care of chickens (we just got babies the other day in addition to our layers) and getting the garden ready for planting. Easy meals are probably going to be the norm for quite some time. Stretchy Beans are great for a busy schedule, its just the other nights I sometimes do things that are a little more time consuming. One nice thing about having a menu plan is if I know what I’m going to be making I can put a few extra minutes toward that on a day I have time or put my crock pot to work for me.
