I am amazed at how fast this year is going. June already. The girls are out of school. The weather has went from snowy just a few weeks ago to warm and almost summerlike. I think we may have skipped over spring. We’ve been working in the garden and tending to chickens. Even with the nice warm weather we still have the wind making a nearly daily appearance. My poor little garden plants do look a little beat up from it. I’m hopeful that they will pull through and flourish. If not, that is okay. I consider this gardening year (my first in Wyoming) to be a learning experience and do have the farmers market (opens end of July) to fall back on if needed.

Last weeks menu had some meals that were less than stellar. My buns for the Sloppy Joe’s on Wednesday kind of flopped. They tasted okay but they didn’t rise well at all. My Lentils and Vegetables with Dumplings had a good flavor but my dumplings had issues. I have been working for months to make a soaked dumpling (soaking the flour to help eliminate phytics. Find out more here) that turned out light and fluffy like the non-soaked dumplings we love. This batched look promising when I dropped them in the boiling broth. But apparently they were too light and fluffy because they almost disappeared as they cooked. Back to the drawing board on Soaked Dumplings.

Menu Week of June 6

Sunday
B-Apple and Banana Smoothies, Sourdough Toast with Kumquat Yogurt Cheese
L- Tuna on Sourdough
D- Joe surprised me with a Date Night. Kids had Mac and cheese

Monday
B- Eggs poached in antelope broth
D- Fried Flounder, Fried potatoes and onion, Green Salad with Lemon Vinaigrette

To Do: PM- soak beans

Tuesday
B- Sourdough Pancakes with Applesauce
D- Pinto Beans (crock pot cooked in antelope broth), onions sauteed in olive oil and butter, Green salad with cucumber, green onions, shredded carrots, soaked sunflower seeds topped with buttermilk/kombucha dressing

Wednesday
B- Sourdough French Toast
D- Beef, been and cheese burritos (sourdough tortillas), Cortido, Green Salad (same as Tuesday)

To do: AM- start tortillas, start bread for the week, make kombucha, do any other kitchen tasks as needed. PM- soak oatmeal

Thursday
B- Soaked Oatmeal with raw milk and apple chunks
D- Navajo Tacos with Sourdough Fry Bread

AM- start fry bread

Friday
B- Fried eggs and sourdough toast
D- Brown Rice Sushi

AM- put rice on to soak, PM- start muffins to soak, soak corn meal

Saturday
B- Muffins, Corn meal mush
L- Leftovers
D- Salmon Quesadillas, Spicy Carrots (lacto-fermented), Fried Apples
