The last Sunday in November. Where does the time go? I hope you had a wonderful Thanksgiving. We went enjoyed dinner at our friends place. My friend did all of the cooking. I felt like a Princess that day. We had a wonderful time especially Christopher. Our friends have a little girl 2 months older than he is. They do not get to see each other very often but have a terrific time when they do. Of course at 2 years old, sharing is a challenging concept. It was very fun though.
I am not scheduled to work this week and would be quite surprised to get called for a job so I’m planning meals that take a little more time, like tortillas and sourdough fry bread. Joe was quite happy when I asked him if Navajo Tacos sound good this week (apparently, they do).
Breakfasts during the week will be either breakfast cake, soaked oats, yogurt with fruit, or eggs and toast.
Lunches are leftovers from dinner or something like a fried egg or tuna sandwich.
Menu Week of November 28
Sunday
B- Pumpkin Pie Baked Oatmeal (leftover)
L- Turkey Soup (leftover), sourdough bread
D- Chicken Fried Elk Steak, Gravy, Mashed potatoes, carrot sticks, sauerkraut
To do: PM- soak beans
Monday
D- Pinto Beans, Rice, Green Salad with Buttermilk dressing
To do: AM-Soak rice, start beans in crock pot using beef broth as liquid
Tuesday
D- Bean, rice and cheese burritos with cortido and steamed broccoli
To do: AM- start tortillas
Wednesday
D- Navajo Tacos
To do: AM- start fry bread
Thursday
D- Antelope Roast, potatoes, carrots, sauteed winter greens
To do: AM- start roast in crock pot. Add veggies (except greens) mid day PM- brine chicken
Friday
D- Brined Chicken, Baked potatoes, Honey Glazed Carrots, bread, Chocolate sourdough cake
To Do: AM- start chicken in crock pot, start cake, make bread
Saturday
B- Breakfast Cake (doubling this muffin recipe and cooked in a 9×13 pan), yogurt
L- Antelope Stew (made in the crock pot)
D- Curry Lo Mein Style Dinner (made with leftover chicken)

Sourdough Frybread. I've made them quite a few times now and they turn out great. Joe says he likes them better than the original recipe.

Your Pumpkin Pie Baked Oatmeal is delicious! I had a baked oatmeal recipe that we used to make before we starting soaking our oats that my girls loved. But the new soaked recipe I was making they were lukewarm about. Yours however, was a hit. And it makes such a generous amount that we enjoyed it for three breakfasts. I think it would be great with other fruit too. Thanks for a great recipe!
