It’s almost that time! Where rivers are dyed green, shamrocks abound, and people wear head-to-toe green. I’ll admit, I’ve never really been one to dive into the celebration (maybe because I’m not Irish), but my husband, who does have Irish blood, seems to love it. And I do love making some special, healthy St. Patrick’s Day food to celebrate.
I especially love this time of year for how inexpensive cabbage usually is! While I’ve yet to see the huge price drops we often see, it has dropped by about a quarter a pound in my area. With the lower prices, it’s a great time to buy a few extra heads. They keep well in the fridge, and even longer when shredded and fermented into kraut.
