Sprouted Lentil Patties
Easy, delicious, and hearty, these sprouted lentil patties are a family friendly and economical main dish. Serve topped with your favorite sauce, between a pair of buns as a burger, or atop a salad.
- 4 cups sprouted lentils
- 1/2 onion, sliced very thin
- 2 cups sauteed cabbage (or use raw cabbage sliced very thin)
- 2 carrots, shredded
- 6 eggs, beaten
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- Healthy fat for frying
Steam lentils for up to 10 minutes to soften. Allow to cool slightly.
Combine lentils, onion, cabbage, and carrots. In a separate bowl, beat eggs and then add salt and pepper. Pour eggs over vegetable mixture and stir to incorporate.
Heat a skillet and add your healthy fat. Cook the vegetables like small pancakes. Cook for about 4 or 5 minutes on side one before gently flipping to side two. Cook for an additional couple of minutes.
Top with soft cheese, sour cream, or your favorite sauce and enjoy!
