>Last week went well food-wise. I’d love to tell you what all we ate but I lost my menu plan and do not have the best memory apparently.
I know we had Venison Curry over Cauliflower Rice one night. And a very simple Gyro another night but beyond that it’s a mystery.
So let’s just move on to this weeks plan. I’m still working. This might be the last week but I won’t know until probably mid week. I have enjoyed the work but do look forward to being home again. I will keep signed up with the temp agency but really only want short term (one to two week at most) assignments in the future. But, if the place I’m at now asks me to stay longer I will. It would be easier to do that then to take a week off and start someplace new.
I’m also still working my bookkeeping job. November shouldn’t be too bad (October was super busy and December will be too with end of the year stuff) and it is wonderful to be able to sit on my couch and do my work when time permits. We are now finished with meat chickens for the year. We had our last ‘chicken day’ this past weekend and now only have our egg layers (32) and 16 young pullets that I’m raising for someone else (she’ll probably take a dozen of them and I’ll keep four) plus 2 roos to care for the ladies. Oh and 9 ducks. I really should cull three of the drake ducks. But gosh, they are sooooo cute.
For this week my meal plan will once again feature the crock pot. I’m loving my new 7 quart crock pot. It is such a wonderful size. I’m keeping a rather tight grocery budget this week and utilizing my freezer(s) and pantries for most of our food. I will need to pick up produce and a few other things that we ran out of.
A very minimal amount of prep was done on Sunday. I started sourdough muffins Sunday morning and baked Sunday evening (in a cake pan) and Kiki started sourdough bread Sunday evening. I put the bread in the oven to bake Monday morning but apparently forgot to turn the oven on. oops. Joe couldn’t figure out what I was doing with the unbaked bread in the oven. Thankfully he baked it for me. I guess I wasn’t thinking too clearly at 6:30AM. I also got broth going (in the crock pot) on Sunday and the second batch Monday with a little help from Lulu.
During the week lunches will be leftovers or whatever can be scrounged up.
Week of November 7- 13
Sunday
B- Sourdough Pancakes, yogurt and fruit
L- Grilled Cheese Sandwiches (combo of cheddar cheese and soft cheese with spinach on it)
D- Breakfast for dinner cooked by Joe- Fried potatoes, Elk Summer Sausage and Duck eggs
Monday
B- Sourdough Breakfast Cake (recipe for Sourdough Muffins from GNOWFGLINS eCourse)
D- Azorean Spiced Beef Stew, Sourdough bread
Tuesday
B- Sourdough Breakfast Cake
D- White Beans and carrots (crock pot cooked in chicken broth), green salad with kefir dressing, sourdough flat bread
Wednesday
B-Soaked Oats, apple slices
D- Crock pot Baked Beans, Black bread (I hope to convert this to a sourdough recipe), sides to be determined
Thursday
B- Eggs and Toast
D-Chicken with Coconut Peanut Sauce (chicken roasted in crock pot, sauce recipe from Eat Fat, Lose Fat), sides to be determined
Friday
B- Soaked Oats, yogurt
D- Crock pot Leg of Lamb (but with my own spices since I don’t have a pre-seasoned leg), sides to be determined
Saturday
B- Baked Oatmeal
L- Chicken Salad Sandwiches
D- Leftovers
